Will started down an interesting path at http://www.fivedoves.com/letters/feb2013/wills211-1.htm that I thought I might add somemore detail on.  He mentioned that Yeshua is the "reisheeth" - but what does that mean? 

The first Hebrew word in the bible is בְּרֵאשִׁית or BERESHEET .  It is usually translated "In the Beggining" but could have been translated differently.  It could have been translated "through the Beginn-or" or "Through he who began it all".  It is a matter of interpretation.

ראשית means "beginning" or "first" or "foremost".  It is derived from the Hebrew root word "ראש" which is usually translated "head".  So "ראשית" means "headmost" or "first" or "foremost".  When we place the letter BET (ב) in front of a word, it means "in" or "on" or "with" or "through" or "during".  For example, "בית" means "house" in Hebrew, and "בבית" can mean "in the house" or "on the house" or "through the house" or "with the house" depending on the context.  When a BET (ב) is put in front of a word that references time, it might mean "during".

So this could be translated "In the beginning".  But that's not the only way it could be translated.  It could also be translated "Through the Foremost" - that is, it could also be interpretted as saying that the act of creation was done through the Person who is foremost over all creation, namely, the Son.  Targum Yerushaylem translated this as "With Wisdom" and said

   "With Wisdom God created the heavens and the earth"
   (Gen 1:1 in Targum Yerushaylem)

for they apparently saw this interpretation, but perhaps rejecting the concept some had proposed that "ראשית" / "Resheet" applies to a person.  Instead, they interpretted it that Wisdom came before all of creation, for Prov 3:19 says "With wisdom He founded the earth, through understanding He established the heavens."

Targum Neofiti decided to translate this both ways, and rendered this passage,

     "In the beginning with Wisdom the Word of Y''H created and perfected the heavens and the earth."
     (Gen 1:1 in Targum Neofiti) 

Targum Neofiti  also saw that "בראשית" could be translated as either "in the beginning" or "with the Resheet" and decided to translate it as both.  Of course, I believe God intended this to refer to both, with "ראשית" being applicable to time as "beginning" and equally applicable to the "firstborn of all creation" (Col 1:15).  This is perhaps why Neofiti translated "Elohim" as "Word of Y''H", for they saw "ראשית" as the Person who is the "Word of Y''H".  But Targum Neofiti took "בראשית" and translated it as "In the Beginning".  then they took "בראשית" and translated it again as "with wisdom".  And since they understood that Yeshua WAS this "Wisdom", instead of saying "Elohim", they said "the Word of Y''H" since they were still trying to explain Who the "Resheet" (ראשית) was. 

Targum Neofiti rendered the second word in the Hebrew text as "created and perfected" rather than just "created" because the second word is בָּרָא / BaRA , which means "created", but is grammatical in the perfect tense.  So they added the "and perfected" to underscore the sense of grammar to the Aramaic reader.

I believe G-d meant "בְּרֵאשִׁית" both ways.  In the beginning, He created through His Son, the head over everything.
