"RE: Tony Els: grass fed vs corn fed"


Tony,
A number of years back, I used to live on St Croix, US Virgin Islands, for 9 years.
I got to know a cow rancher, shortly before he passed, and his wife took over the business.
At 60 years old, this lady was able to take care of everything with the cows, from feeding, all the way to the end, even as good butcher  (all by herself).
Instead of asking for a good explanation between the difference of their holistic beef, from other ranchers,
I was more interested, at the time, how she able to kill, hoist up, drain, and then cut the cows by herself.
I had heard, once, explained to me how at that kind of ranch, it began with the soil, and what they did and did not do with it.
Also, I didn't pay as close attention to the explanation of the difference between the grass fed cows, from other, corn fed, cows.
I wish I had paid more attention then.
Would you be able to explain what the difference is between grass fed and corn fed cows?
Does it make any difference in the final product?
I guess, those with grass fed cows were more concerned about the soil, than the others were.
By the way, that couple's ranch may have been in their family for years, going back to when their ancestors were freed from slavery.
Over the years, lately, I think, a lot of the cow ranching on St Croix has gone elsewhere.
