"Unclean food should we be eating it? As a Christian?"

To Edwina about foods:  I have no new radical ideas about what may be considered unclean food by the Jewish people, but what comes to mind are two NT passages that talk about such things.  They are 1 Tim. 4:1-5 and Mat 15:11, 17, 18.
In 1 Tim 1:1-2:
“But the Spirit expressly says the in the latter times
Some shall depart from the faith, giving heed to seducing spirits and teachings of demons, speaking lies in hypocrisy, being seared in their own conscience,
1Ti 4:3  forbidding marrying saying to abstain from certain foods which God has created to be received with thanksgiving by those who believe and know the truth.
1Ti 4:4  for every creation of God is good, and nothing to be refused if it is received with thanksgiving.
Ti 4:5  for it is sanctified through the Word of God and prayer.

And that it is more important to consider what comes out of our mouth than what goes in!

Mat 15:11   Not that which goeth into the mouth defileth a man; but that which cometh out of the mouth, this defileth a man.

Mat 15:17   Do not ye yet understand, that whatsoever entereth in at the mouth goeth into the belly, and is cast out into the draught?

Mat 15:18  But those things which proceed out of the mouth come forth from the heart; and they defile the man.
Seems the Old covenant was about the physical (works) and the New covenant is more about the Spiritual, (grace and love).  We are reminded that we are not saved by what we do, our works, but what has been done for us by Jesus.
Hope these verses sheds some light on what you are asking. 
What we eat does not matter as long as we are thankful for it and pray over it.
